![]() Did you know that the first version of Paella was made with snail and rabbit? Today, many Paellas include multiple types of meat varying from poultry to seafood, sautéed with rice, broth, a tomato blend, and saffron which gives the dish its rich, signature yellow color. Paella has been one of Spain’s staple dishes dating back to the 1800s, originating in Valenica, Spain. Paelle is an Old French word meaning ‘pan,’ which makes sense because when cooking Paella, every ingredient combines together in one giant, shallow pan. This past Friday, Young Chef’s Academy not only fed our minds with the history of Paella, but our bellies as well. Ten members of our community joined the team of chefs at Young Chef’s Academy to make one giant Paella. Guest Chef Gonzalo greeted us with his expertise on Paella and showed us the secrets of cooking up this hearty dish. Students helped prep vegetables such as onions, garlic, peppers, and tomatoes as Chef Gonzalo seasoned and sautéed chicken, pork and shrimp. Not only did our community chefs get a taste of Paella, but Chef Gonzalo also showed us how to make patatas (a potato soufflé) with a homemade aioli. The aromas that filled the kitchen along with the lingering tomato taste left on my tongue convinced me that I had spent the last three hours in a quaint little home kitchen in Spain. Our very own NEISD Community Choir blew the audience away this past Wednesday night at St. Mark’s Methodist Church as they sang their hearts out for their final spring concert. Songs ranging from Halleluiah to Parting Blessing filled the air with sweet tunes. Joseph Scutti, a teacher at NEISD’s very own Stahl Elementary, has been directing the NEISD Community Choir for almost ten years now. As Mr. Scutti put it, “The Community Choir is not only a talented group of people who put up with me every week, but they are a family.” Most of the members of the choir come back semester after semester to create musical memories together. With Director Scutti’s extensive knowledge and the talented, passionate members of the community, we really were in for a musical treat. If you missed them singing at St. Mark’s United Methodist Church last night, don’t fret! Our talented Community Choir has been invited, once again, to sing the National Anthem at a home Spurs game this coming fall. Stone Oak, Tuscany Heights and Oak Meadow after school Drama Kids® participants hit the stage last month to showcase their performances to family and friends. With voices from the Deep South to ants and grasshoppers, the young actors were rehearsed and dressed to fit their parts. Each performance was filled with songs and dance as all kinds of personalities filled the stage. Upon the final bow, the young actors received medals as first year participants and trophies for 2nd year participants. Great job Drama Kids!

Share because it is demanded of you." - Yogi Bhajan ![]() Madeline Hernandez has been teaching Kundalini Yoga and Meditation since 2009. She received her certification from the Kundalini Research Institute located in Española, New Mexico. The center was formed by Yogi Bhajan in 1970 and oversees teacher training programs in 52 countries. Kundalini Yoga has been taught from Master to student for hundreds, perhaps thousands, of years. Madeline’s teachers were direct students of Yogi Bhajan. Madeline says, “It has been a blessing and a privilege to be a Kundalini Yoga teacher.” To her, it is a complete Yoga. “It takes the mind, body and spirit into deep consideration. It takes care of the whole person – inside & out!” Taking a Kundalini Yoga class has tons of positive benefits and is probably one of the more formal styles of Yoga currently taught. In any class around the world, you will find the six key components: 1) tuning-in with the Adi Mantra, 2) pranayam or warm-up, 3) kriya, 4) relaxation, 5) meditation and 6) close with the blessing song, "May the Long Time Sun Shine upon You".
